It's certainly interesting. If I had two Big XII teams to pick that might make it to the Elite 8, I probably wouldn't have picked those two teams at any point during the season or post-season.
I'd hardly call two teams making the elite 8 surprising, especially a 2 and a 3 (after the three went down in round 2). If anything, Kansas not making it is the biggest surprise, since all they had to do was beat two teams that may be outside the top 25 in the country (MSU only w/ Lucas out).
And who else, aside from Kansas, would you have picked. Sure, Texas until February, but there's a reason those teams got the highest seeds after Kansas... they had the best body of work.
