Extra virgin is oil extracted from the first pressing of the olives. Virgin would be from the second pressing. Regular from the next, and so on.

Not necessarily. Extra-virgin is always first press, but must have less than 1% acidity. So, you could have a first press batch of oil with 1.5% acidity which would be labeled Virgin olive oil.
Also, the lower the grade the higher the smoke point, so each type has a particular use. So if you are making salad dressing or something raw, use extra-virgin or virgin (most can't tell the difference if blended), if you are skilleting a chicken use plain oil, and if you are using it for frying, light oil has the highest smoke point, so that would be best.

We only cook with EVOO, since it's so damn hard to find 25 pound buckets of lard these days.
