fresh shark meat is excellent. When you cook it fresh, there is no ammonia taste or smell at all.(although, I have not eaten that species of shark in the video)

The key to great shark is to, sad to say, whack off the tail while the shark is alive. This bleeds him/her out and removes much of the uric acids.
I hate this, but it's for the best.
