Tonight - Chicken Wings
Saturday - Smoking ribs, brats & salmon (first time trying salmon)
Sunday - Kabobs (chicken, steak and shrimp)
Monday - Burgers and dogs

Wife wants to do the chicken bog on Monday...we'll see how much is left over.....:pop:

we're doing Louisiana hot sauce burgers tomorrow. some local ital sausages with hot peppers and onion, they are GOOD. Canino's=the shizz.

Tonight: Filet Mignon on the grill after the kids go to bed followed by a good cigar and a stiff drink.
Saturday: Ribeyes on the grill followed by a good cigar and a stiff drink.
Sunday: Dogs & burgers on the grill for my free loading in laws. No cigars! No booze! (They frown on booze & cigars; actually they frown on fun in general)
Monday: Porterhouse T-Bones on the grill, a good cigar and a siff drink.

yeah, though here in the last couple minutes i was thinking of heading over to the middle eastern market (where i buy marinated olives) and picking up some frozen gyros slices.

i like to saute the onions and peppers in a skillet with garlic but my buddy frowns on this...because he thinks cooking everything on the grill is better. so, we drizzle with EVOO (Rachel Ray invented EVOO) and some crushed garlic...and grill em. get these awesome jalapeno and cheddar buns from the local Safeway (the only decent thing at the store, Safeway sucks out loud).

well, I have brined the salmon and now it is drying so a pellicle forms...whatever that is. I've never made smoked salmon so this should be interesting.

smoked salmon is done and tastes terrific. I'm happy with my first attempt at it.

Ribs will be done in 2 hrs. :meat:

thank you, but I'm not that much of a gambler when it comes to food. Although, I do try - especially if it can be made on the grill or smoker.

One thing that I have never tried, but want to is grilled asparagus.

that's easy. get a plate, break off the stem ends, drizzle the plate with RR's EVOO and minced garlic, salt pepper, maybe chili pepper. roll em around a while. put them on the hot grill and roll from time to time for about 7-8 minutes.

you can also par-boil them to keep the tips from scorching on the grill. more work than i want to do, most of the time.

after they are done, if you put a couple together and a slice of good cheese on them in a foil diaper on the grill, that's melty good too.

Sunday: Marinated flank steaks. I never tried one unti a couple of years ago. Marinate overnight, grill about 16 minutes to medium rare, slice thinly. Good stuff.

Holy crap, I had one of those at this Cuban restaurant in Miami. I wish I knew what they had marinated it in, but after they grilled it they sliced it damn near paper-thin. It was un-freakin-believable.

I'd like to try marinated flank steaks sometime. What do you marinate them in?

We have two different marinades that we use:

Lemony
1 1 1/2 lb beef blank steak
1 tsp finely shredded lemon peel
1/2 cup lemon juice
2 Tbsp sugar
2 Tbsp soy sauce
2 tsp snipped fresh oregano or 1/2 tsp dried oregano, crushed
1/8 tsp black pepper

I added a little bit of olive oil and some minced garlic as well because the first time we used this, it was very lemony so if that's not your thing, add a little oil and garlic......or do it anyway, it was good.

Not Lemony
3 cloves garlic, finely chopped
1 tbsp grill seasoning blend (recommended: Montreal Steak Seasoning We use a container of some kinda "OU Seasoning" somebody gave us one time...the point is, pretty much anything will work)
1 tsp smoked paprika, ground chipotle chili powder or ground cumin (we use the cumin)
2 tsp hot sauce
1 tbsp Worcestershire sauce
2 tbsp red wine vinegar
1/3 cup extra-virgin olive oil
2 lbs flank steak

We marinate them overnight and it seems to work well. And we grill on a pretty hot grill for about 16 minutes for the average sized flank steak you'll find in the store but you're trying to cook to medium rare. Slice thinly.

Saturday - Ribs with Rendezvous seasoning and sauce, grilled corn on the cob
Yesterday - Grilled sirloin, mashed potatoes, fresh green beans
Today - Burgers and Brats

well, the holiday is complete with a simple American tradition:

burgers, brats & dogs on the grill. along with corn on the cob, potato salad and baked beans.
I should be ripe tomorrow.
