I'm really liking Joe T Garcia's. I just tried some meduim. I'm going to try the tomatillo next.

What kind of store-bought salsas do the fine people of the SO enjoy?

The National Cowboy & Western Heritage Museum has (had?) some badass habanero salsa. Burned off my taste buds.

The tostitos restaurant style is pretty good. That's what I usually get.

It's not Costanza but it's close, Cotenza or Cotanza or something. It's tasty and only in the Mexican section and not usually by the Pace etc... Get the medium first, it's plenty hot.

Mrs. Renfro makes really good green salsa that's hot. I also like some kind that you buy in a jar in the refrigerated section. It has a white label. I don't think it's HOTR, but maybe it is.

Sometimes if Im feeling frisky I make it with mangos, most of the time I have it straight up tho...

hell ya I like to put it in a jar and let the peppers just melt the hell ot of everything else. You have to eat mine within a week week and a half... it has avocados in it as well. The Mango is really good with habanero those flavors were just made for eachother. and the sweet makes it just hot enuf... mmm salsa...

and buy the salsa mix for $9.00 plus shipping. It is just one tablespoon to one can of diced tomatoes. It takes about 13 seconds to make up. It is really good. It comes in a four ounce jar, and makes about two gallons of good salsa.

Totino's are always on sale here, 10 for $10. We eat a lot of them.

And 1TC did ask "What kind of store-bought salsas do the fine people of the SO enjoy?"

I buy it constantly hoping I'll find something I like but am constantly disappointed. There are plenty that are okay, Herdez and Pace to name a couple. Probably my all-time favorite was Old El Paso Picante, but I haven't been able to find it since leaving Oklahoma. :(

I don't think they sell Joe T.'s out here, it may be great for all I know.

Park a grill outside the 5th wheel. Grill some Roma tomatoes and some jalepenos and chop it all up on a cutting board.

How small is your trailer?

I do all my chopping on a cutting board. No blender needed for the beginning salsateer.

now I gotta haul a grill around with me?

Actually I was planning on doing just that but there isn't a dishwasher and I'm maxed out on kitchen gadget storage space. Crock pot, toaster, electric burner thing and pyrex baking tray things, a muffin tin and a meatloaf tin and I'm outta space.

I'm also very messy and forgot to take my dishes inside and put them in the washer after my last job. The trailer is pretty big, I'm just out of space and washing facilities.

Best way to skin your peppers, too. I don't get all that fancy with it though. You can use the burner on your stove. Hell, for you power tool types, you can use a propane torch.

Just put the pepper on an open flame until it's entirely black. Put it under cold water and the waxy skin rubs right off with your thumb. Almost instant roasted peppers. It softens the flesh, gets rid of the waxy skin, and gives it an almost smoky flavor. Very bueno. Works for salsa, pico, stuffed bells, relleno, you name it. Fits awesomely with tomatillo salsas, as it helps to knock just a lil' bit of the tart off the tomatillos.

Give it a shot!

best advise for preparing peppers and that's really along the traditional lines (roasting and skinning). If you freeze them post roasting/skinning they'll become hotter over time.


oh, and store bought, I just use pace because well, they have it here

gas stove on high (rotating them with tongs) or a toaster oven are the best way to roast peppers i know.

for store bought, i usually buy what is on sale and add cilantro and ground cumin, and shake the jar like a mofo and put it in the fridge.

BTW. Does cooking the mixture with lime juice count a la ceviche style?

Salsa can be cooked, but I like the salsa frescas best. I probably 30 or more recipes, from which I devised my own recipe.
In the Winter, I have even resorted to using Ro*Tel as the base.
I usually make it a gallon at a time, which lasts a week if the kids aren't around. The hotter, the better.

I use a grill. Regularly.
I love grilling actually and I'm not too bad at it.

I get the Hell On The Red as well, both mild and hot. The hot makes good queso, much better than Rotel. I like it better than Joe T. salsa.

I have made my own fresh, uncooked salsa in the past but for the most part I am too lazy to make it all the time.

Herdez green tomatillo salsa in the 6 oz cans are pretty good. or El Pato jalapeno salsa, yellow can.
