I've often wondered about that whole "speak now or forever hold your peace" line at a wedding.

That's just inviting trouble.

Why didn't the tradition evolve that invited the airing of grievances before the reciting of vows?

Maybe a brief half-hour set aside before the ceremony, where the bones to be picked could be resolved?

Probably wouldn't be too many weddings....
