Have any of you ever heard of this?
My friend told me of a coffee marinade his folks to use in their restaurant. The thought of using leftover coffee as a main ingredient for a marinade never crossed my mind. He said that the caffeine tenderizes the meat. I've got a couple of ribeyes bathing in this new recipe mainly consisting of coffee, worcestershire sauce, soy and black pepper, funny thing is that it smells wonderful. We shall see how it ends up.

there are a lot of foods that coffee really compliments. I've heard of it as a rub, and the biggest one is that coffee and chocolate work together really well.

I almost always use grounds in my rub for steaks.


Grounds
Blk Pepper
Garlic salt
sage
chili powder
kosher salt

speaking of coffee and chocolate, this is my current favorite chocolate bar and it's finally available in Oklahoma (amazingly, the OU Bookstore is the only place I have found it and it looks like I'm the only one buying them)

also, my wife hates coffee with a passion, so I made her try the coffee crisp without telling her the name of it and she liked it.

Steaks turned out pretty good, I'll use the marinade again.

That's curious. How could caffeine be a tenderizing agent? I'd be willing to try it, but I'm just wondering why it would work.

See, steaks still think they're cows, so when you hop them up on caffeine they get all frisky and start running all over the place. After a while of that they get wore out, and thus more tender. ;)
