Alright hillbillies. Let's see if y'all can top my dinner from last night. Every Christmas the wifal unit and I go to our friend's house (Walt - the guy who makes the tater salad everybody loves at the tailgates and his wife Earline). Walt cooks a standing rib roast (prime rib for you ****ing hillbillies) every year and seems to outdo himself each time. Here's what we marfed on last night:

-Prime rib, rare in the center, gradually turning pink, and crispy on the outside. Cooked to absolute perfection. I sliced mine, bone in, at about 2-3 inches thick.

-Fresh pheasant cooked in a sherry/mushroom sauce over wild rice.

-Kosher salted baked potatoes

-Green beans from our garden

-Assorted veggies (radishes, peppers, etc.)

-Home made candy cane ice cream (vanilla with chunks of candy cane broken up in it)

-Copious amounts of Crown Royal

And the highlight of the evening was a bottle of Barton & Guestier Bordeaux, vintage 1966. Earline had gotten it from her father in 1966. It was allsome.

Top that.

for dinner last night i had wings and beer...couple shots of tequila and a red bull and vodka....oh, and i played poker and made money...best christmas ever :D

Well... I had my side of the family at the house yesterday (Rhino was with his, we haven't join the two because my side are a bunch of hillbillies and his family are just good people and I don't want to subject them to that till AFTER the wedding).

So my momma, grandma and I made the following:

Samosas

cream cheese with rasberry salsa

homemade hot sauce

cheese ball

relish plate

fried turkey

ham

rolls

mash potato

sweet potato

cranberry sauce

dressing

green bean caserole

big ole salad

pecan pie

pumkin pie

coconut cake with boiled custard

fudge with and with out nuts

and toffee



and some other stuff but I can't remember, our house is wrecked and I'm tired I haven't moved from the couch all day.

Girl, I love fried turkey. However, a properly marinated, properly cooked standing rib roast simply cannot be beat. Besides, I eat smoked/fried/baked turkey all year long. I only eat home-cooked prime rib once a year. Like butta, cut it with a fork....

Fried turkey = unbelievably hillbilly. And loving fried turkey is hillbilly, pass me a corncob pipe, a straw hat and some moonshine.

Girl, I love fried turkey. However, a properly marinated, properly cooked standing rib roast simply cannot be beat. Besides, I eat smoked/fried/baked turkey all year long. I only eat home-cooked prime rib once a year. Like butta, cut it with a fork....This is meaningless without a recipe.

1 large Maine Lobster Tail

Homemade garlic mashed potatoes

Sauteed mushrooms

Fat Tire

Homemade chocolate - chocolate chunk ice cream

I think we did alright.

I'm so happy that you liked the pumpkin bread. :D

I would like to send you and Mrs. Dean some of my strawberry jam that I made last September if you like. I made them from ever bloomings. The strawberries last summer just wouldn't stop producing. They even went to seed and started up again! The second harvest was so sweet that I hardly had to add any sugar.

Stuffing. The whole damn pepper shaker.

Mashed potatoes. Lumpy.

Gravy. None.

Cranberries. Straight from the can.

Bread rolls. Burned.

Then I had to go to work and have filthy casino smoke blowing in my face all night.

Of course we'd like. One can't have too much strawberry jam. And my wife didn't do strawberries this year anyhow, so we're pretty close to being out.I'll send that off this week. Hopefully you'll have it by New Years morning. :D

As for the dinner, ours was very simple. I planned the menu and did the shopping but my mother in law, sister in law and daughter did the cooking for me since I wasn't feeling real chipper.

We had:

Butternut Squash soup with sage

Cornish game hens with wild rice and shiitake mushroom sauce

Roasted vegetable strudel with Red pepper coulis

Endive and toasted Pine nut salad

...and for dessert a while later, we had Blueberry and cream Napoleons

We had four diffrent Christmas meals @ four different places on Sun and Mon.

Sunday lunch: turkey, cajun jalapeno poppers, salad, Cam's Mom's fruit salad, mashed potatoes, dressing, gravy, chocolate cheesecake, apple cider.

Sunday night: ribs, chicken and brisket, Merritt's cookies, brownies.

Monday morning: pancakes, coffee.

Monday lunch: sliced brisket, turkey, 6 or 7 different casseroles, jalapeno cajun poppas, 2 different salads, bread, potatoes and gravy, about 10 different dessert choices (I went for pecan and pumpkin pie, brownies and cookies).

Monday night: (Cam's Dad's new old lady is a Food Network type trendy chef person) salad with nuts, croissants, salmon, prime rib, various types of wine (I'm no wine nerd) and 5 different types of dessert.

belch.

oh yeah, not to mention the oilfield luncheon I hit on Friday chock full of some tasty ribs.

Mom, mom, mom. You seriously do not need to ask me "do you like..."

There's only 2 things in this world I don't eat (but will if I'm hungry enough).

The first is guts. I mean why? Why would I eat liver, tripe, brains, heart, gizzards, trepas de leche, cooney or bunghole when there's a good chunk of meat right next to it? Of course if you grind it all up into liverwurst or a hotdog or a sausage I'm OK with that.

The second is fishy fish. I like most fish, but if it's got that nasty smell like the redhead Rebecca Johnson did in the 9th grade, I ain't gonna eat it.

Strawberry/Kiwi? Hell yes.

I made my first STANDING RIB ROAST/PRIME RIB on Monday and it was delish. They are just not that difficult. Alton Brown = The Master - cook it at 250 until it is about 125 and then crank that somebitchin oven up to 500 and finish it for about 15 minutes. Easy, peasy.

I have your strawberry already out to send Dean. I'm sending one of my daughters strawberry/kiwis to colleyville. :)

Next season I'll make some of my bread and butter pickles. They are really good. I don't mean to brag, but I won a blue ribbon on those. :D

I can't top the dinner, but breakfast was awesome. Potato Basil Frittata and homemade egg nog. :D
