I caught it at the time and remember wondering why our scoreboad operator (game played in Norman) would cheat for the Red Raiders.

I remember it too. Everyone was just too ansy to give up on Oklahoma that weekend... remember that certain reporter who "assumed" we lost to Tech? :D

actually that was probably an error on FSN's side, considering they provided those graphics

Yes that was FSN's screwup.....if you look carefully at the scoreboard in the stadium on the video you will see they have the right score.

In sports production their graphics are provided by themselves not by the scoreboard operator at the game.
