View Full Version : "Hard" fudge or "creamy" fudge?

I prefer "hard" fudge myself. The kind mama makes from the recipe on the side of the Hershey's baking cocoa can. It actually requires teeth to take a bite.

The other stuff, which is approximately the consistency of well-formed poo is NOT good.

I'm also generally opposed to the insertion of walnuts in fudge. In that sense, I am a fudge purist.

What do you guys think?

Then Dean prolly ain't much on "divinity" either. Frankly, I like that stuff too, but mama always said it has to be made under exacting environmental conditions for it to turn out right. i have no idea WTF she was talking about, but it had something to do with relative humidity.

If the humidity is wrong for any candy, things can go terribly awry. I made excellent chocolate truffles last year up in OK, then went down to San Antonio to try the same recipe and had to keep them refrigerated so they wouldn't fall apart. :(

However it is that my mom makes it is the right way. That's all I know.

The neighbor lady brought over a tupperware dealy full of fudge, and another one full of peanut brittle. The peanut brittle is gone. The fudge hasn't been touched. Why? Cause peanut brittle is so much > fudge it's not even debatable.

I can't stand fudge, all of the other stuff, I eat it, but old-fashioned fudge, ewwww. Now there is one exception, there is a lady up here at work that makes the fudge with the velvetta in it, man, it is not too sweet and is good.

This stuff mama makes is poured out on buttered platter from the pot she cooks it in. Then, it cools and sets-up. The surface takes on a glistening sheen. Then she slices it up into little 2" squares. Man that's good eatin'

Les Miles would admire my resolve at all the peanut brittle I've said "no" to this week. Dang. It's like people know its my Achilles heel and they're bringing it to work just to **** with me.

Homey, have you ever had Aunt Bill's Brown Candy? It's the best non-fudge fudge out there.

I like the hard fudge too, but with pecans or walnuts.

I guess so! But I can't say I don't like the hard stuff. Not sure if I've ever had it, actually.
