is great. My grandma sent some leftovers home with me yesterday. Makes for a great dinner right now. I think this combination might be the best casserole out there.

I have a similar recipe using yams instead of sweet potatoes and pecans instead of apples. My son likes to have this for brunch the day before Thanksgiving. I serve it with sliced apples, pineapple chunks and red grapes.

It takes...
3 pounds of yams
1 pound of pork sausage, mild or spicy
2 tablespoons unsalted butter
1/3 cup packed brown sugar
3/4 cup chopped pecans
1 teaspoon ground cinnamon

Preheat your oven to 350 degrees.
Form your sausage into round patties and cook them over medium high heat until brown. Drain on paper towels, cover with foil and set aside.

Wash yams, prick with fork and place on baking sheet. Bake for 1 hour or so until they're soft but not mushy. Set aside to cool.

Cut the cooled yams into 2 inch cubes and place in a 2 and 1/2 qt casserole dish. Add your sausage, the butter, brown sugar, pecans and cinnamon. Gently mix them all together. Cover and bake for 30 to 40 minutes or until hot and bubbly.

Whaaaaa? What's the difference in yams and sweet potatoes? I always thought they were the same thing.

:confused:They do taste very much alike. I like using yams because I believe they're healthier for you and have a richer flavor. Maybe this link can explain better than I. My mother taught me an easy way to tell the difference in the super market. She said to remember that yams are darker and uglier than sweet potatoes. :)

From my experience the best way to tell, other than color, is that a sweet potato can be eaten by itself like a baked potato due to the high sugar content. They are sweeter than yams. Yams need all the brown sugar and yummy marshmallow stuff on top

Yams need all the brown sugar and yummy marshmallow stuff on topThe yams I get from Akins are quite tasty and dont need any sugar. My grandchildren enjoy them with a little butter.
