so that I can watch them on my Television. What programs do you guys use? What format do the video files need to be in to be compatable with a standard home dvd player?
I've searched google, but can't seem to find the right combination of words to show me what I'm after.

Usually MPG and AVI. If you're using commercial software like Ulead DVD Movie Factory.

Many different ways to do this. I use
WinDVR to record to the PC
NERO to edit, chapter, make menus, burn the discs
DVD Shrink for further compression if necessary
DVD-R single layer if you're going to keep them
DVD-RW if you want to reuse the discs like vhs tape
