When you are selling food items at Oktoberfest (e.g. knockwurst, bratwurst and polish) the folks who buy before 8pm are generally sober and have their money ready.
After about 9pm, people stagger up, mumble something about "gimme some 'o them german hot-dog dealios and load them mutha-f-----s up" and shove a wad of cash at you.
You then unwad the sweaty money just extracted from their various pockets, count out the proper amount, and the inebriates are generally very trusting you won't take more money than they owe you.
Also, a minority of the post-9pm crowd will take offense at the fact you only have German mustard and no French's "yeller" mustard.
Finally, you can sell a lot of food to people if you generally call out from your window things like, "d00d, if you don't eat, you are gonna fall down soon."
