The season's right around the corner...

BACON WRAPPED JALAPENO DOVE


12 doves, soaked overnight in salt water
1/2 pound jalapeno pepper cheese, sliced thin
3 fresh jalapeno peppers, sliced in 1/4 inch rings - or one can jalapeno pepper rings, drained
1 pound bacon
Round wooden toothpicks
Rinse and pat doves dry. Place each dove on slice of bacon, cover wt. cheese slice and one (or more to taste) of jalapeno rings. Roll up all ingredients in the bacon slice and secure with toothpick. Grill over low heat until bacon is fully cooked, about 10-20 minutes.

we do the same with duck but we add a slice of onion in there.

If you have never tried the awesomeness that is dove or quail breast cooked as described then pilgrim, you just ain't lived.

I've been known to add a slice of granny smith apple too.

I've been known to add a slice of granny smith apple too.

Grilled quail is the best.

Been yrs since ive hunted But I do know that dove is great anyway ya wanta fix it ;)

well?

It wasn't the best opening day. 3 of us got about 20. weather was great.

I'll be trying the above recipe tomorrow.

there's not much that you can bacon and jalapeno wrap and it not be good.


I'm thinking that splurging for the fresh jalapenos in the above recipe would dominate the jar ones.

fresh is the only way to go.....and cheaper than a jar of the pickled ones.
