I stood in line for 35 minutes in the heat of Atwoods parking lot and got me some fresh corn from this wonderful Amish family who sells it each year. I froze most of it but today I made my family a corn souffle. I thought maybe some of you would like the recipe.

Corn Souffle

2 Tbsp. grated Parmesan cheese
1 10 oz. pkg. frozen corn, thawed or 10 oz. fresh cut from the cobb
1 c. milk
1/2 c. cornmeal
1/2 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cayenne pepper
2 Tbsp. butter
4 egg yolks
4 egg whites, stiffly beaten
thyme

Heat oven to 350 degrees. Grease a 1-quart souffle dish; coat bottom and sides with 1 tablespoon Parmesan cheese. Place 1/2 of corn, milk, cornmeal, salt, nutmeg and cayenne in blender. Blend to make a smooth puree. In medium saucepan, melt butter; add corn puree and remaining corn. Cook over medium heat about 5 minutes or until thickened. Stir small amount of corn mixture into egg yolks; return to corn mixture, stirring constantly. Remove from heat. Fold in egg whites. Pour mixture into prepared souffle dish. Sprinkle mixture with remaining Parmesan and thyme. Bake at 350 degrees for about 35 minutes. Serve immediately. Serves 4.

No. :D I dont think the Amish have snotty fingers. Its a big sin.

We had a huge bag of fresh corn delivered today. This family brings us some every year and its delicious.

No, why'd ya think there's 2 Tsps of butter in the recipe.......:)

well, I guess it's ok to make fun of the Amish, just don't post any pictures... :DI was not making fun. I admire people who dont believe in snotty fingers. :D

I swear I could eat fresh sweet corn raw off the cob if it wouldn't give a feller such a powerful gut-ache.
