It's a toss-up between MK2 and SF2. Both were great.
The nod goes to MK2 because of the "finishing moves"

Street Fighter II. It isn't close.

A worthy addition to the list as far as older games go would have been Konami's Yie-Ar Kung Fu.

It had a complicated move set like Karate Champ, but also featured different fighters with different styles like Street Fighter.

Plus, when you kicked the fat dude in the nuts, his eyes got all big.

I would sell my truck to buy a functional, and repairable, Karate Champ game. I would not, however, be able to give them my truck until after I used it to move the game. ...just in case any of you know anybody...

I think you can pretty much download all of the mentioned games and play them via an emulator on your PC . . . or at least you can some of them. :D

Bad Dudes was awesome...but I thought the only games that qualified were the ones that were 1-on-1 fighting. Not those scrolling "bad guys keep coming" type of games.

That was the kind of game Bad Dudes was, right? I get them mixed up sometimes. If that is what Bad Dudes was like, me and my friend spent a lot of time at one of the local gas stations playing that one.

Out of all the ones in the original post, I like MK and VF best. I just remember Virtua Fighter being kind of the first of its kind. I don't remember really what "kind" I'm referring to, but it just seemed like a really new thing at the time. Maybe because the "ring" was 3 dimensional, not just side-to-side.

Yeah, we're talking about different genres here. The games you're talking about, like Double Dragon, Bad Dudes, and Final Fight, are commonly called "Beat 'Em Ups," I think.
