When I'm in Mexico I usually get all likkered up, get nekkid, and tell the local policia to "eat me, I'm a ****ing burrito."

It has been a couple of years, but there were a few fun things. There was a boat tour to a village south of Puerto Vallarta. It is primitive, but they serve a nice lunch on the beach, and you get to climb up to see a waterfall. This was okay.

The really fun thing we did was to take an ATV tour of the villages behind Puerto Vallarta. This is connected to a tour where you can either take a horseback ride up to a waterfall or take the ATVs. Then you eat a lunch with fresh guacamole and homemade tequila.
