My own version of Carol Shelby's... much less salt, much more garlic and cayene... jalepeņos, sour cream and sharp chedder. All piled on top of a thin bed of original FritosŪ.

I also add red beans because I'm considered a "Yankee" in these parts.

It is in the low 40s here... nothing like the cold up there at home, but still... you take what you get. And this is chili weather!

too funny, i got back from ft benning late last nite and made sure we went to the store this morning to get fixins for chili

i'm about to start it in a few, along with cornbread! :)

Had some for lunch.

Did not have all the fixin's though. Just cornbread and cheese.

i use my wife's simple recipe, and just add some flavor to it with spices, etc.....so easy to make but damn good!

I have a book that has a recipe from a guy that won the Texas Sate Fair's chili contest a few years back. I still have some in the freezer - good stuff.

In Texas, it is a sin to include beans in your chili. I would bet your frozen potion is without the bean.

I have a near-homicidal problem with the exclusion of beans in my chili.

Oh, and sour cream, picante sauce and shredded chedder can make most any dish good.

Oh, and... do share...

Heading to the store later this evening to buy the ingredients to make 04's famous chili.

Let's see.......one can Hormel chili. One bottle Louisiana hot sauce..............

chili without beans goes in CDIAB... it can't stand on it's own

My wife made a big crockpot full of chillie today and I never thought about eating it with jalapenos. ohh..man, it hits the spot!

Actually his recipe is the best of both worlds. If you like beans in chili you cook them separately (pot o water and bacon, simmer 3 hours) and put them in the bottom of the bowl under the chili.

Oh, and the recipe in question, sice you asked:

1/4 cup oil
3 lbs. beef chuck or round (1/4-inch cubes or chili grind)
1 onion, peeled and finely chopped
4 garlic cloves, peeled and finely chopped
1 TB paprika
5-6 TB chili powder
1 TB ground cumin
1 tsp. dried oregano
one 8 oz. can of tomato sauce
1 tsp. salt
1 cup water (or more)
1 jalapeno chile seeded and halved (or 1 tsp. cayenne)

Heat the oil and cook the beef until evenly browned. Ad onion and garlic and saute until onion is translucent, about 5 minutes.
Add paprika, chili powder, cumin, and oregano - stir for 3 minutes to cook the spices. Add tomato sauce, salt, and water and stir to combine. Add jalapeno or cayenne (I think I used a ripe jalapeno AND a serrano and chopped them both finely - tossed them in seeds and all) if you want hotter chili.
Bring to a boil and simmer for 2 hours, stir occasionally and add water as needed. Serve ladled over pinto beans (if you want 'em) and put some onion and cheddar on top.


I found that a little less oil might be better - maybe only 2 oz. would do if you're using ground chuck, a bit more if you're using round.
