According to Alton Brown:

Glass container, not plastic.
Container with sloped sides, not square bottom corners, so the stuff inside circulates and blends evenly.
Powerful motor.
You don't need a lot of different speeds. Two speeds and a "pulse" function are plenty.

This was the hottest thing going in 1898. Works even if the power goes out.

You can pretty much go with whatever AB recommends. He's pretty thorough in his research. I never understood all of those speeds anyway. 10 seconds on mix = 5 seconds on whip. All you need is low and high.

My parents got me one of those "Bullets" as a gift. It actually works really well. It does come with a larger size pitcher for mixing larger amounts but I don't don't know that I would recommend it if you plan on that type of use regularly(I've not used it much for that). It does work great for mixing one or two drinks at a time though.

Grab the one behind the bar at Pearl's while they aren't looking.
