has officially started. We're having a chili cookoff today up at work and I have entered my 3 alarm recipe. I did tone the heat down a bit for the judges, but overall I'm pretty happy with it. Anyone made a batch this year yet?


Pass the fritos and green onions.

Not yet. I wanted to make some this weekend but mid to upper 80's doesn't put me in the mood to make it.

i've got 2 batches in already this year and both were so good that i formally challenge you to a chili off.

Ever made it with turkey?

I find that I use turkey now instead of beef for stuff like Chili, tacos, etc..

Much leaner, less fat and I like the taste better.

I wanted to get some buffalo meat but didn't. I will make some buffalo chili at some point this year though.

Not that I think I'd win, but if we had several entrants bring some good chili, it'd be a win-win situation for everyone there. :D

Green Chili

1 rot. chicken
2 cans diced green chiles
1 can regular rotel
2 cans Mexican rotel
2 cans chicken broff
1 chopped onion
garlic to taste
? chopped jalepeno's(you decide)

shred chicken and dump into pot with everything else and heat it. eat it in a bowl with some cheese on top or smother a bean and cheese burrito with it.

How about a chili recipe with some beef in it? I always make it with Williams chili mix. I'm thinking about smoking a brisket and using the leftovers to make chili.

Do not, I repeat DO NOT use 'Carol Shelby's Chili Mix'. Terrible, well not terrible but just like Wolf brand in a can with less flavor.

I make a hell of a chili from venison........it takes about 8 hours to cook but it's real good. I could bring some for the Chili cookoff at the OSU Tailgate.....it will RYFO............

I think 'insert canned chili here' is best for things like hot dogs, CDIAB, nachos, etc.

If you spend time making some good *** chili, nothing is better than just a bowl of it.

Well, I placed 2nd out of 6 entries, not bad I guess. I know I'm biased, but the winning batch was more like stew, it had cut up steak in it and was real runny. I'll take runner up though, I did win a t-shirt for my efforts.


How about a chili recipe with some beef in it? I always make it with Williams chili mix. I'm thinking about smoking a brisket and using the leftovers to make chili.

3/4 Ground Beef
1/4 Sausage (I used Owens original)
2 to 1 Chili Powder to Red (cayenne) pepper to taste
Cumin to taste
Salt to taste
10 minced garlic cloves
1 14oz diced tomatoes
1 14oz stewed tomatoes
2 sweet onions
2 red bell peppers
pinch of crushed red pepper
couple of dashes of Franks Red Hot
a dash of cinnamin
1 miller lite

Once meat/peppers/onions/garlic are done, drain fat and add remaining ingredients and simmer for at least an hour until desired consistency. I don't like mine too runny or too thick, just enough juice to soak into the fritos.

I drank 3 or 4 and put 1 in the chili.
I use quite a bit of cumin, probably 2-3 tbl spoons.
I used a little over 4lbs of meat combined in this batch.

This is the recipe that won this year's chili cook off at work. Good n spicy.

Jack’s Kick Butt and Don’t Bother Taking Names Chili

2 lbs. ground chuck (not to lean)
1 lbs. ground sausage (hot Italian works best)
1 medium sweet yellow onion peeled and diced
3 Tbs. chili power
1 Tbs crushed red pepper (adjust to taste)
6-12oz. cans stewed tomatoes
1 Tbs. Chalula hot sauce (Tabasco works as well)
½ cup sliced jalapeños (adjust to taste)
1 tsp. ground cinnamon
1 Tbs. Hershey’s coco (original unsweetened)
1 12oz can of mushrooms
1 can of sliced black olives
1 cup raisins
1 12oz can light red kidney beans (optional)

In a large soup pot:

1. Brown ground chuck and sausage.
2. When meat is browned, add the onion, stir then simmer for about 5 minutes.
3. Add the chili power and crushed red pepper, stir then simmer for about 5minutes.
4. Stir in the stewed tomatoes then stir pot then simmer for about 5 minutes
5. Add the hot sauce and jalapeños, stir then simmer for 5 minutes.
6. Stir in cinnamon and coco then add the rest of the ingredients, stir then cook for 2½ to 3 hours on low heat stirring occasionally.

Serves: 8 to10 bowls

Penzey's spices (http://www.penzeys.com) sells the best chili powder I've ever smelled. You can get it regular, medium hot, hot, extra hot, and wuss. (Ok, there's not really a wuss variety.) Close second is Gebhardt's.
