So how does this recipe stack up? Saw it on the website for Dave's Insanity Sauce.
ARIZONA DESERT CHILI

Servings: 6
Preparation Time: 1:15
Categories: Meats

2 tablespoons vegetable oil
3 garlic cloves, chopped
2 onions, chopped
1 green bell peppers, chopped
3 pounds beef
1 teaspoon ground cumin
1 teaspoon ground oregano
˝ teaspoon Total Insanity Sauce
10 tomatoes, peeled and chopped
1 can beer

* Have been chopped, not ground

Heat oil in a large heavy skillet. Add garlic, onions and green pepper. Sauté until soft, about 5 to 7 minutes.

Add beef and lightly brown on all surfaces. Drain off some of the fat if a lot has accumulated. Lean beef trimmed of all fat should not have an excess amount , however.

Add remaining ingredients and simmer for 1 hour or slightly longer. Put a cover on skillet during cooking time, and slightly tilt it so steam can escape. Check often and stir to prevent sticking. Skim off fat as it rises. Best if allowed to sit, tightly covered, for an hour after cooking is complete.

Serving ideas: Serve with cornbread or cheese biscuits.

Now that doesnt sound too bad. I love cumin and should find some insanitiy sauce. Most recipes off of the food network are either so so or you need an degree from a chef school to prepare it.

the key with chili is to let it simmer for a few hours. You can't just cook it and then eat it as soon as it heats up.

With something made from corn: homemade cornbread on the side, over Fritos, or with corn stirred in.

Must have LOTS of sharp cheddar cheese, and a few slices of raw jalapenos and chopped onion (or maybe a good pico de gallo), and guacamole instead of sour cream.

UHHH. Chili "three-way," "five-way," or whatever does not exist. Chili stands on its own merits and except for MAYBE Fritos, which are at best an indulgence, needs nothing in or under it. Beans on the side if you must have them; same with cornbread and tortillas and saltines and rice. Cheese in the bowl is...okay...I guess. I hate to be a food fundamentalist but it is simply true. Anything else--spaghetti especially--is a lame-*** Cincinnati/Northerner invention, or just not chili. Eat the red by itself to truly appreciate it.

And PS, nothing I've ever tried to cook off of Food Network has seemed excessively difficult. :)

Chili should be eaten with tortilla's...

Sacto, you should simmer your jalepeno's in the chili

they'll help with the taste and the heat. If you want real good pepper secret. Roast them, and then freeze them. The longer they freeze the hotter they get.

My grandfather had a grocery store/diner for 40 years and one of his specialities was the "Mixed bowl". (chili and stew) this is something that you definitely need to try.


Opal's Diner in Tahlequah used to have a "red top" on the menu. Chili and beef stew in the same bowl, actually pretty good.
