What pork do you eat? Myself, I like the smoked pork chops, the regular pork chops, and the roast pork quite a bit. I also enjoy ham of varying cures, and let's not forget bacon. Plus, my Grandma makes a rocking head cheese.

Pork shoulder, pork steaks (I've really only seen them widely here in St. Louis for some reason), bacon, chops, loin, ham...

About the only things I haven't tried are the trotters, the ears, and the offal.

I've eaten snout. (Snoots around these parts)

I once had tripe by accident. It was in some sort of green chili I had in Santa Fe. Was absolutely terrific, then someone told me it was tripe. The psychological transformation of my palette was really fascinating.

I buy this tenderloin that comes in an oven safe plastic bag, pre seasoned and everything. 40 minutes in the oven, no work and it taste awesome. Good on sandwiches the next day too.

Pork Belly, Ribs, Bacon, Shoulder . But my favorite is a pig hind for the holidays.

A fresh ham is something that most people wouldn't even recognize.

I still like Shake N' Bake butterflies (My mom used to make these every other Sunday).

Bacon, ham and BBQ pork ribs would be just about it. Oh, and pork rinds with Northern Thai chilies. Chinese style roasted suckling pig is pretty good too.

The best pork I've ever had was at a luau in Hawaii...they wrap the pig in taro leaves and cook it in the ground. It melts in your mouth and has an incredible flavor.
And the fact that you're eating it in Hawaii just adds a little something to the experience.

True. My fiancé's family comes down from Iowa once in a while and bring seasoned pork shoulder steaks, thick ones. Throw em on the grill and they ate awesome.

Oh god, carnitas. There's a place right by my house that does a great version. Then, there's one farther into the city that does a crispier version that's amazing too, with fried jalapenos mixed into the fried onions.

Don't remember any shirtless guys carrying the pig, but the young, muscular, smooth-skinned Hawaiian men performing the different South Pacific dances were just about as tasty as the pork.

I think I tivo'd a BBQ show that did Hawaiian roast pork once. I'll check on it and pass on the process if I can find it. I think it was wrapped in banana leaves.

just grilled a really nice pork tenderloin for dinner... was awesome... made a bbq sauce to finish it off... started with a little head country then added some brown sugar, honey mustard, red wine and grilled peaches... deliciousness!!!

This is how to properly dress a hog for cooking (I prefer the head on, though).

Cooking a pig on it's back is the only way to go, as it keeps the drippings in the meat.

Their isn't much on a hog that isn't edible and delicious. For the most part I stay away from organs but fresh hog liver is as good or better than beef liver.

I went to one of the best Italian restaurants in the US called Vetri in Philadelphia and had pigs foot ravioli. It was unbelievable.

The first time I went to visit my in-laws in Mexico, they butchered a pig for carnitas. They start with rendering the outer layer of fat in a huge copper pot cooking over an open fire. Takes a few hours and the result of stage one is the pork skin chicharones.

Then they put in the meat - most all parts - the shoulder/butt, tenderloin, ribs, etc. Cook it submerged in the rendered fat for a looong time. Then eat it with tortillas and pickled jalapenos. I tell the part that blew me away was the baby back ribs.

While they were cooking that afternoon, I went inside the bedroom to take a nap ... in the bedroom that stays coolest during the day. When i woke up, there was the head of the pig hanging from the ceiling. They were planning to use it later for pozole. If you've ever eaten pozole cooked with the pig's head, you know it has a unique richness to it. I've cooked pozole many times - almost every new year's eve - but I've never used the pig's head. A decent substitute is pig's feet (not the ones in a jar) and neck pork bones. Not quite as good but still good.


My maternal grandfather was a wheat farmer in the Piedmont area. He had a massive heart attack at age 55 and died. His absolute favorite meat was salt pork. That and the two-pack-a-day habit apparently did him in.

I did the same thing when I was in Hawaii. I don't know if it was the traditional cooking methods that made the pig awesome, or the open bar with the most delicious Mai Thais I've ever had.

I've roasted a pig in the ground in Oklahoma. it was pretty tasty. no mai tais though, just bud light. think we wrapped it in foil.
