Smoke some chicken wings, pull them from the smoker, dip them in butter, toss them in chili powder (homemade) and fry them for just a few seconds to get the skin crispy, what do you think?

As much as I love chili powder, I would cut the powder with something.

I think I'll lose some of the CP in the fry. I know i'll only try a few this way before I do them all with the full CP.

what do you have on the chicken while they're smoking? anything? nothing?

I brine the chicken over night in 1 gallon of water, 1 cup of Koshar salt, 3/4 of brown sugar, half a small bottle of tabasco. I probably won't put any spices on them since they are going to be breaded with CP. Usually when i smoke chicken i rub the meat and the skin with cajun seasonings.

Sounds like a lot of work for boney wings of which you would need to eat a lot of to get full....

Thats how I usually brine chicken and half a bottle of tabasco per gallon of water does not give it any heat. A full bottle adds some nice heat.

If you don't like wings then it's not your thing, but if you do it a nice treat.

It might be good, but I definitely wouldn't use straight chili powder. That sounds gross.

I have another party scheduled for today. We are going to try it. I have had the chicken wings marinating in lime juice, garlic, black pepper, chili powder and soy, fish and oyster sauces for a day.
