I have done BBQ events of up to a 1000 people with a friend of mine. We have a couple of large smokers that we use and we are currently building a trailer for a new smoker that will have much larger amount of workspace. The big key to any smoking or BBQing is to have an instant read thermometer. I use the following:

If you are cooking to medium rare on beef for example you want to take it off at 125 degrees and let it set for 10 minutes. Slicing into meat to see if it is done is for rookies and it will ruin your steaks.

As for Duck I am not sure I would ever grill it. The best way to do duck is to put salt and pepper on it and sear it in duck fat on a stove top. You want to cook it until medium rare and let it sit up to 10 minutes. You cut it on the bias and serve it with wild rice and some sort of root vegatables.

LOL. No I learned to cook duck a long time ago when I worked in a kitchen. I have tried it soaked in buttermilk, gin, wine, stuffed, smoked, grilled with bacon, seasoned with garlic salt, thousand island dressing, stuffed in a goose...you name it. Living in an area that is one of the largest duck hunting regions in the US you sort of try everything before you figure out what you like.

BTW there are certain type of ducks like sea going ducks and mergansers that you cannot cook. They are horrible.

How do you like to grill/prep your tri-tip?


Rub it generously with your favorite dry-rub..."it" being the Tri Tip.

Wrap it in a single layer of aluminum foil, fat cap facing up.

Lo/Med heat grille, place the silver football on the grille and close the lid. Depending on the size of the Tri Tip, it should be perfect in 45 min / hour. Slow roasting is the key.

Use a thermometer to determine the preferred core temperature, I like just barely into medium rare.

When ready, pull that sucker off the grille, LET IT REST FOR AT LEAST 20 MINUTES.

The fat cap will be gone, but not forgotten! Cut thin slices, like brisket, against the grain.

The aluminum foil will have some ungodly orgasmic au jus.

Enjoy bro. The sammys the next day will be even better.


TIP: Always have your butcher cut the Tri Tip for you and tell him not to remove the fat cap. I keep emphasizing this, but if you cook one without the fat, it will absolutely be dry and disappointing. If you are anywhere near Norman, Artesan Meats do a real good job cutting you a custom roast.

No kidding.

The single best way I know to cook tri tip is a style of cooking known as Santa Maria style BBQ. The folks that settled California developed this style of cooking and it involves using red oak as the base for the fire. In lieu of red oak you can use about any oak to cook. They have been cooking tri tip for decades and it is the core of their cooking and the best way to cook tri tip IMHO.

the guy wants $100 for it...
when i asked him if he'd ship it....at first he said ok....
the next day he flipped out and thought i was trying to scam him....he told me to get lost...
i said i'd pay upfront and all he had to do was take it to a ups store and i'd handle the rest...

it kills me the guy freaked and i have no way of getting it...

i already know what model i want....the 270 built-in...
we're expanding a porch/patio and i'm going to build an outdoor grilling area with granite counters...

is the contest in tulsa?
there was a contest in enid last weekend...the red dirt barbecue cook-off.....i think it's a yearly event..

was thinking about taking the grilling class that you mentioned....but can you really learn much in a one hour class?

I prefer to capture the drippings, instead of having them flare off. Either way, the heat and smoke cradles the meat, giving it the grilled flavor, but with foil the juice gets used twice.

I wasn't suggesting wrapping it tight like a baked spud. A tent is best to allow the heat/smoke to circulate.

I've grilled without the foil. Just a personal preference.

Yeah, the contest is at the headquarters (13th & Lewis). It's for HB owners only and everything must be cooked on a HB. It's a little unorthodox as for as contests go, but it's a lot of fun. You have to turn in 1 grilled item and 1 smoked item. So you could have smoked chicken up against smoked salmon. and grilled ribeye against grilled pork chops.

The grilling classes are awesome and I learned a lot. And they are listed as one hour, but they really last about 3 hours. You get to eat all the food cooked and they bring in beverage reps to assist with pairing beer and wine with foods.

No kidding? Did I type somewhere that I did? Do I look anything like the guys handling the hog? I was axing a question Mr. Grill Police.

That being said, have you seen the new big WSMs? I've got two of the smaller ones and one of the bigger ones and while that hog wouldn't fit, a whole buttload of ribs/brisket/sausages/chickens will.

Nope. All I smoke is ribs, brisket, sausages, chicken, turkey, fish, elk/deer roast, and sometimes jerky.

If you're talking grilling, that tigger is probably OK. If you're talking smoking, no way it kicks a WSM's ***. Hell man, JM can even smoke with a WSM.

Everyone is invited to the tailgates. We try to do one with the whole hog every year, but it has to be a night game (it takes all day to cook it), and you don't want it to be 100 degrees either. That Chinese cooker box puts out some serious BTUs.

Traeger's are for people who don't know how to BBQ, but like the food. Just put in your pellets, set it and forget about it til the food is done. Tending the fire is part of the escape for me, so I couldn't do it on self cooking machine.

What does that even mean? It seems like it's either easy to use and creates a good product or it doesn't.

Just giving ya hard time JM. I know how sensitive people are about their grills. Yes, Traeger makes an awesome grill, I'm just saying I like to have more control and don't want a grill that I just load and come back to when it's all done. I like the journey, not just the destination.

Besides, the OP was calling me out, why are the rest of you here?

Oh I know. There are plenty of Big Green Egg fanatics lurking around here.

But I do know what you mean about the actual work it takes with a charcoal smoker. That's the best part in fact, when the charcoal is going, a cold beer is in your hand, etc.

But I guess I'm thinking if you can truly "set it and forget it" then that's something to consider.

Looks like the MAK grills get great reviews as well.

traegers are as easy as gas but better flavor because it uses real wood pellets...
the grill smells incredible when you're done cooking...but unfortunately ....the food just isnt as good as with charcoal..

In these pics you can see the box better, and see the tray of coals that goes on top. Yes, it's a La Caja. Kinda weird that it cooks from the top down. I don't own it, Phil's dad does, and I've helped him set it up and get it going several times. It is a two-man operation - primarily to remove the tray of coals, turn the hog, and put the tray back on. You also have to score the hog with a knife after turning. It's DAMN GOOD pork.

1. because i have three different family members that all swear by them, i didnt want to feel left out
b. yes, my very first
3. yes, i know i am cheating - but i dont care - because when i'm eating that delicious meal - i dont sit there boasting about how it took me all day to keep the charcoal going

i had a brisket in for 12 hours saturday - i did other things whilst it was smoking - my yard, errands, etc...

if the bbq experience is about mastering the temperature of a briquet - then knock yourself out......if all you truly care about is the finished product, then you can hardly go wrong with a traeger

but what do i know, i eat at taco bueno....
