Vet, I make this stuff all the time, I usually just pour soy sauce, Worsct. sauce, LIQUID SMOKE (makes a big diff to us), a little Teriyaki marinade, Lawry's salt, Mrs. Dash, black pepper, hot sauce, garlic and onion powder into a ziplock bag and then let the sliced meat soak for a day or so, turning the bag now and then. I never measure, it's just some of this, a bit of that...never tastes exactly the same, but it always disappears really fast!!! Hope this helps!!!!

SunnySooner

Yeah, I don't add a lot of Lawry's, the soy sauce is the main source of salt. It is salty, but not overly, more smokey/spicey. A couple pieces hold you for a while, too, cause it takes forever to chew it, and it is intensely flavored, so a little goes a long way.

You can buy low sodium soy sauce. Normally like 50% less sodium. Look for the green lids instead of the red ones.

Judas H. Priest smoking Bambi's mother****ing rump Howie. You've got the source of the best jerky ever made standing how many feet from your galdamn window eating corn?

Low sodium soy sauce. Check.
Garlic powder. Check.
Worcester sauce (you can't taste it anyhow). Check.
Black pepper. Check.
Crushed red pepper. Check.
Rooster jizz. Check.
VERY minute amounts of liquid smoke (if you already dumped more than a microdot of that **** in there your jerky will taste like your underbritches on fire - that **** is way too strong, but you need just a splash). Check.
Add extra rooster jizzand/or more crushed red pepper to taste. Check.
Slice your meat and throw it in a bag with all the good stuff for a day or so. Check.
Lay it out on the dehydrator and let er' go. I'd do it on the porch though. That **** will keep you up all damn night.

Marinating in a zip loc is not a good idea. Marinating should always be done in a glass dish. Plastic or metal leech into the food when you use them to marinate.

Glass baking dish covered with foil in the fridge for 2-3 days.
