I just put em on. Hours from now there will be much smoked meat goodness.

One rack baby backs.

One rack spare ribs.

We're talking plenty for today, and leftovers as well.

:D

And I owe it all to the epic thread on smokers on this very site last year. ;)

I'm spreading cauliflower florets in a baking pan and covering them with 2 in. cuts of bacon. Slow roasting until the bacon is crisp.

I was just thinking about grilling up some ribeyes tonight. I was also toying with the idea of grilling some cucumber. Never done it, but I like cucumber and I like grills- what could go wrong?

Grilled cucumber? I've grilled a lot of veggies, but cucumber would be a new one. Why not give it a shot though!

I'm pretty sure I'm grilling steaks as well, smoking a cigar, enjoying an adult beverage or two, and enjoying this great weather we're having today.

Steak: One Man's Search for the World's Tastiest Piece of Beef

Dude travels around the world searching for the best steak to be had, while lamenting that the quality of steak has decreased in the past decade or so, cause of how we raise our cattle & stuff.

At least that's what I get from it having just started the thing.

At least that's what I get from it having just started the thing.

I make the best steak that I've ever had. Do I over season on occasion? Do I under/over cook on occasion? Yes to all the above. But they always are good, usually, they can be cut with a fork and have a flavor to die for.

A good cigar and a few drinks during cooking are imperative.

I've settled on a go-to steak preparation method myself.

A sizzling cast iron skillet and the oven are involved.

Still like to throw one on the grill occasionally too.

I've broiled em on occasion for a few, then cast ironed them. Turned out pretty good.

I go sizzling hot skillet 3 min per side.

350 oven 3 min per side.

Put on plate, tent with foil and let rest for 5-10 minutes.

Works great when I don't feel like grilling.

You're making me real, real hungry, Curly Bill. I do hope that at some point in the future that you invite me over for one of your meat orgies. I don't know any hookers over there, but I could possibly import some from Thailand.

Tryin to avoid the diabetes - less rice, pasta, and potatoes and more cauliflower, cabbage, and carrots as a substitute.


for example, instead of spaghetti and meat sauce, I steam cabbage and carrots and pour the meat sauce over them instead of pasta.

So I went with a 1 inch ribeye, a filet for the guest, and grilled peperes and onions. We decided on a cold cucumber and tomato salad. Very good. Probably grilling pork tomorrow.

Ribs in the smoker in 2 weeks.

What smoker did you roll with Curly?
