With all due respect, how exactly do you make Chicken Tikka at home? Saffron rice? Saffron is very, very expensive. Masala curry is not and should be available.

But, I trust you are a great cook and can get the ingredients.

Your cheesecake brownies probably taste out of this world, which means I couldn't have one of them.

Speaking of your husband, my 8-year old nephew was so impressed at that last tailgate party that he still belts out what little he knows in an operatic voice. His parents are a bit alarmed. But, your husband had a very dramatic impact on the little kid and I want to thank him for that.

Yes I was and it was truly allsome. I wanted to just knock PG out of the way and marry the man on the spot. But, I can't cook as well as PG so I probably would have got not much than an assault charge.

For the cheesecake brownies...they are dangerously awesome. Seriously, I'ma have to freeze them so we don't eat them all at once.

For the tikka masala, I found a Gordon Ramsay recipe. I've had the dish at a couple of Indian restaurants, and this recipe was spot on. Very few specialty ingredients, actually. I bought the saffron and the garam masala from International Pantry here in Norman. Although, if you can't find garam masala, you can make your own. I was going to do that (I have a ridiculous collection of spices) but I had to go there for the saffron anyway, so I figured I'd save myself the trouble of toasting and grinding all of those ingredients.

I didn't have have curry leaves and I admit I also added a dash of vinegar and lime juice to the sauce. It was awesome.

Here's the brownie recipe:

CHEESECAKE BROWNIES
Brownie layer:

1 box fudge brownie mix* (regular size, for an 8×8” pan, not the family size box)
All the ingredients called for on the box (most likely ¼ cup water, ¼ cup oil, 1 egg)
Cheesecake layer:

16 oz. cream cheese, room temperature (2 8 oz. containers)
24-32 oz. powdered sugar (depending on how rich you want the brownies to be)
4 eggs
1 Tbsp vanilla extract
1/3 cup semi-sweet chocolate mini-morsels, or grated chocolate
Preheat the oven to 350° F. Line a 9”x13” pan with aluminum foil and lightly spray with cooking oil or nonstick spray. Mix all of the brownie ingredients together and pour into the bottom of the pan. Separately, mix all of the cheesecake ingredients (make sure you whisk out all of the cream cheese lumps). Pour it on top of the brownie layer. Pop the pan into the oven for 40-50 minutes, until the top of the cheesecake layer is golden brown and a toothpick inserted in the center comes out mostly-clean, not ooey-gooey.

I actually ended up turning the temp down to 325° and adding about 15 minutes. Next time I make these, I’d use the same amount of batter, but spread it into the 9×13 and an 8×8, just so the brownies are a little thinner and will bake more evenly.

Let them cool before cutting, or else they’ll gum up your knife and look messy. (You can even chill them first.)

I'm going to try the Tikka recipe. We used to eat at Gopurem (it was spelled something like that) in OKC 10 years ago. My wife and I have had CTM all over the country and once in London but we still prefer that buffet place in OKC.

Pumpkin is pretty great but my favorite is actually zucchini bread. I have never understood how such an eh veggie makes such a delicious loaf of bread!

There are different types of saffron with a broad range of prices. You can pick up the type you need at a local Indian food store if one of those are around.

Interesting that Ramsey's recipe does not call for garam masala.

I've never understood the idea of a generic "garam masala". It's like saying "spice blend". That's why I toast and grind my own, and it is amazing the difference you get. You know how making your own pasta sauce is always better than store bought? Yeah, multiply that by about 50.

The dish looks fantastic, and with your skills I bet it tastes even better. Remind me and I'll give you our family's orange bread recipe. Fair warning: prepare to spend an entire afternoon making it. That's why I only make it around Christmas. :D

That's why you pre ground and keep it in an airtight container. ;) With your pie making capabilities you should try for making samosas. MMMMMMmmmm...

Grandma Daisy passed the recipe on to my mom, and my mom doesn't share the recipe with anyone. The way I see it, the recipe isn't mine to share yet. :O

Okay the verdict in my house is that these are awesome.
I think the only thing we may do different next time is let them sit out a little longer because the top "cheesecake" layer didn't get as firm as it probably should've been. Still tasted awesome though. Thanks for the recipe
