I made sausage balls for Christmas and used hot turkey sausage and fresh jalapeno. It was fabu!

I used JC Potter hot sausage and sharp cheddar. I still have a few hidden in the freezer. :D

The swine discussion is indeed divine. I do not mean to demean a good Oklahoman. It's just that the Jimmy Dean complaint was damned compelling.

I don't use near as much Bisquick--just enough to hold 'em together, they's jucier that way. :D

I once took 'em to a St. Patty's party, and I had put green food coloring in the mix for fun. Everyone brought an app. and we voted on the best. There was everything from stuffed grape leaves to olive tapenade, etc. Yep, my little old hillbilly sausage balls won--$50 gift card to an Irish bar, yippee.

That's when we lived up north. Poor yankees don't know how to eat.

The recipe I use is 2 1/2 cups Bisquick, 1 lb. sausage, 1/2-3/4 lb of shredded cheese, 1/2 cup onion, 1/2 cup green peppers (but I hate green peppers) and 1/2 tsp garlic powder. I diced 2 jalapeno's without the seeds.

While I grew up here in Norman, my family is from back East. There are a few things that I wish we had here, like really good sub sammichs and Philly Cheese steaks.

If you use the spicy sausage, you don't really need much else for seasoning. Not IMO, anyway.

With the jalapeno's seeded, they weren't super hot. At least not to me. They had a nice burn for a few seconds and then it was gone. I couldn't really tell much difference with the hot sausage I used. They were still nummy though and garlic goes well with almost anything. :D

If you have to chop, it's more effort than my pig people deserve since they're just wolfing it down anyway.;)
