Homemade Potato Chips

I really love homemade potato chips. There used to be this famous (well among Baylor students) burger place called Big Daddy's that served really delicious homemade potato chips. They closed down though and I hadn't had them until I noticed they were on the menu at this Sonic-like chain in Mississippi called "Bumper's." They're still delicious.

I've never made them myself, but I have a deep fryer so I thought I'd give them a shot. Do any of you ever make them?

And fries, occasionally. You don't need a deep-fryer, just a fairly deep cast-iron skillet and some oil.

Lays makes the best. Homemade can't compare. (I like the salt and pepper chips the best)

the side of my cheese grater has a slicer that is perfect for chips. i like em around a medium brown color. the key is salt and pepper them right out of the oil.

Only because the oil can be a pain in the *** to dispose of once it has outlived its use. Homemade chips and fries (I prefer the thicker, shorter British-style) are so good, though.
