two deli slices of cooked ham
hatch green chile salsa

A four-egg omelet?
My brother used to serve three-egg omelets as a breakfast for two at The Patio and they were still as much as an average person could eat at one sitting.

back in the day, i used to eat breakfast at a place called the Aristocrat. they had two omelet sizes. full, and half. the half omelet was 2 eggs.
the Aristocrat also used to have "greek hashbrowns" which were hb with peppers and onions....somehow "greek". they also had a reasonably decent CFS for Boulder. i tanked it in hungover too many times to remember for the CFS, eggs and greek hasbrowns.
then, the Gap paid the building owner double the rent on a new lease and adios the Aristocrat.

An omelette without jalapenos ain't an omelette. It's just eggs and a bunch of crap.
Personally, I like chorizo, cheese and jalapenos, or sausage/bacon/ham, mushroom, peppers, and jalapenos. Or just cheese and jalapenos.
