Create a folder in "My Photos" with all the pictures you want to add to the phone.

In the sync settings on iTunes, check the box for "Sync Photos from" and then drop down to "Choose Folder"

Should be self-explanatory from there.

Do you have a micro SD slot in your phone? For less than $10, you can get a 2 GB micro SD card with an adaptor that fits into the SD slot on your computer. Load the pictures onto the card, and then pull the micro SD card out of the adaptor and put it straight into your phone. You can also take pictures with a digital camera that uses an SD card using the micro card. Transfer them back and forth at will.
