Vet, you could either befriend that rooster with a little OVJ...or kill it.
Then marinate what little meat you get in the OVJ. You'll need it. Rooster meat would be tough. :D

Mole de Pollo con vegetales

Ingredientes:

* 3 libras de piernas y muslos de pollo, sin piel.

* 3 tazas de caldo de pollo.

* 6 chiles secos, sin semillas.

* Mole Goya.

* 1 cebolla, picada.

* 5 dientes de ajo, pelados.

* 2 cucharaditas de comino en polvo.

* 3 tazas de agua.

* Sal al gusto.

* ¾ taza de vegetales por porción.

I've raised lots of chickens. If you ain't got a coup, you may as well just let em' be outside and the coyotes/dogs/foxes/etc. will finish them off after a while. If you want to eat them, don't scald em' and pluck em'. Just skin em'. It's a lot less work, it doesn't stink so bad, and it's better for you.

Also, rooster meat ain't any tougher than hen meat - as long as you kill the roosters young. If it's an older rooster, they're tougher than hell. However, if you're making dumplings, it doesn't matter. My mom used to make jack rabbit and dumplings. If you boil it long enough, it gets tender.
