Have been re-watching entire Sopranos show, on season 2 currently. My question is: When they are talking about construction jobs and mention a "plumbing no show or electrical no show" how do they make money from that?

no, they bully the guys running construction to pay ghost employees that never show up but get paid and have insurance

Yermom pertty much covers it. They get paid, they get insurance, PLUS they have "legitimate" income to report to the IRS, which helps explain how they can afford a house, car, etc., plus the job pays dues to the applicable union, which is in bed with them.
