I was always told to save the grease after cooking bacon. Sure, no problem. But, what in the world do you do with it?

keep it in a bowl or something... i like to use it to season my cast-iron pan after i clean it.

throw it in the trash after it solidifies..you just don't want that down the drain.

In the early 20th century grease and "drippin's" were spread on bread as a meal.

And bacon grease can be used like other fats for cooking. Lots of flavor, just don't tell your cardiologist.

Freeze it first, though. Freeze it (or let it cool off), throw it in an old butter tub, and BLAM. Frozen bacon grease. Add to...

Green beans (as mentioned)
New potatoes
Poke salad
Leaf lettuce
Shrimp
Meatloaf (only if it's really lean, but if it is, this is the thermonuclear bomb)
Base for roux

And Lord knows what else.

Warm Bacon Dressing

1/4 c. balsamic vinegar
5 tbsp. extra virgin olive oil
3 tbsp. minced shallots
1 tbsp. minced garlic
2 tbsp. brown sugar


Start by frying the bacon in a skillet until crispy. Transfer to paper towels to be saved for salad topping. Reserve 3 tbsp. of the bacon drippings in the skillet.

Mix olive oil in to the skillet keeping over very low heat. In a separate bowl whisk together vinegar, shallots, garlic, and brown sugar. Add to the skillet and continue to stir over low heat until warm.

Crumble the bacon that was set aside and use it to top a spinach salad.

Best served over spinach. The bomb.

I forgot spinach. Good one.

For those few that like cooked spinach and other greens, drizzle with bacon grease and vinegar. That's lip-smackin' righteous.

Make gravy with it, fry things in it, re-season your cast-iron skillet, any of the previously mentioned uses.

And ditto on brat's post, too. If nothing else, just don't pour it down the drain. As soon as the hot grease hits the cold pipes it will solidify and basically give your sink a coronary. Which is fine, if you like buying Drano and calling plumbers a few years from now.

According to Shelby Foote, Confederate soldiers would use the bacon grease to mix with corn meal and then snake it around the barrel of their rifles and then cook it on an open fire for a tasty meal. Sure beat hard tack.
