I hate to be a stickler here, but I don't think that pigs eat shiot.

They will eat garbage, but not shiot.

I think that the saying is: Happier than a pig in shiot.

Now - I have however seen a dog eat shiot. So maybe you should say -

"I'm happier than a dog eatin' shiot."

Then again - the dog that I saw eatin' shiot - didn't look all that happy to be doin' it. He was just eatin' it - 'cause it was there.
