Level of acidity. EVOO is so yummo because it's less acidic than VOO.

Also, some will claim that EVOO (so yummo) is called that because the olives are pressed cold, which is true, but VOO can be cold pressed as well.

I cook a lot. That said, olive oil is for the masses, call me when you get some Bruce cash like me and upgrade to truffle oil.

They each have their place, as does regular olive oil. That is, olive oil that has been allowed to have sex.

Jeez, what a bunch of uncultured ****in' hillbillies.

Extra virgin is oil extracted from the first pressing of the olives. Virgin would be from the second pressing. Regular from the next, and so on.

I knows me some olive oil. I pretty munch drink that ****.

Not necessarily. Extra-virgin is always first press, but must have less than 1% acidity. So, you could have a first press batch of oil with 1.5% acidity which would be labeled Virgin olive oil.

Also, the lower the grade the higher the smoke point, so each type has a particular use. So if you are making salad dressing or something raw, use extra-virgin or virgin (most can't tell the difference if blended), if you are skilleting a chicken use plain oil, and if you are using it for frying, light oil has the highest smoke point, so that would be best.

So Bermuda-Man, this is a rare case where the more the product is handled, the less it costs to purchase in the store?? Inconceivable!

Extra virgin olive oil comes from olives that have never even thought about having sex.

I would take both to the prom, just in case one of them decides to leave with someone else.

We only cook with EVOO, since it's so damn hard to find 25 pound buckets of lard these days.

Try any Hispanic grocery store, you can find it easy there. The best refried beans are made with lard....and bacon fat.
