I love the Glory soundtrack. It's one of the few that I listen to from beginning to end without skipping a track. I think it's also one of those rare albums that gets more and more pleasurable as it gets toward the end -- much like the movie itself.

Hmmm. See, if it's a collection of pre-existing songs by various artists I don't really think of it as a "soundtrack". I know stores classify them that way, but to me "soundtrack" means original music writen specifically for that movie.
However, if you're talking compilation soundtracks, Ocean's Eleven (the Clooney version) is damn good.
So is Nacho Libre.
For original music, Dark City has an awesome soundtrack.
Pirates of the Caribbean 2
Star Trek: First Contact had a ****ing SWEET soundtrack.
Oh, and X-Men. Michael Kamen is good.
Master and Commander was great.
And one of the best I've ever heard is The Red Violin by John Corigliano. Violin solos by Joshua Bell.

Help! is a good one.
some others:
Pump up the volume (best of the mainstream flicks trying for "indie" cred--pixies, peter murphy, bad brains doing the MC5's Kick out the jams, concrete blonde, soundgarden, sonic youth, cowboy junkies))
Blow up (Herbie Hancock, Yardbirds, Lovin Spoonful)
repo man (Iggy Pop, Suicidal Tendencies, Fear, Circle Jerks, Black Flag, etc.)
last tango in paris (jazz score by Oliver Nelson)
the rhythmatist (Stewart Copeland)
rumble fish (Copeland)
hi fidelity (velvet underground, 13th Floor Elevators, Liz Phair, Elton John, Kinks, Love, Stevie Wonder, Stereolab, etc.)
Urgh A Music War (documentary--a "must see" basically): Police, Cramps, XTC, Devo, Gang of Four, Fleshtones, Pere Ubu, Echo and the Bunnymen, X, Steel Pulse, etc.
Elevator to the Gallows (Louis Malle's classic "noir", with Miles Davis soundtrack).

When I think of Soundtrack, I think of both. I think the background music (pre-existing songs by various artists) can tell a story just as much as an original score...best example of that for me - The Big Chill

another point I wanted to address with this.
If a film is a biography (see: Bird, Ray) then there's not much room if any for any 'new' original material. Therefore, a soundtrack of all previously recorded material by the deceased is really the only compilation you can have. In some cases, like with Bird, they left Parker's stuff alone, and used current musicians for all of the accompanying roles.
I think the same kind of goes for a film that is taking place in a past time period, where you kinda use music of that time to help with the setting. Not as much of a place for new original material as well.
Besides, as original material goes nothing is worse than putting Disney/Dreamworks together with Randy Newman. :D
