Steak - Fogo Vivo (Brazilian grill) Bangkok
Mexican- Casa Romo (Ardmore)
Cajun- My grandmother's gumbo was pretty good.
Seafood- A seaside shack on Hua Hin (Thailand) beach can't be beat
Chinese - Shark's Fin Restaurant (Bangkok). They have the banquet style Chinese food done real good. Peking Duck is better than in Hong Kong.
Fried Chicken - There is a street vendor that does fried chicken in Bangkok that is superb. Biting into their fried chick is like biting into an apple. Of course, all that locked in goodness is chicken fat isn't exactly healthy.

Steak - "9" at the Palms in Vegas.

Hamburger - Some little roadside joint that I happened upon driving in the mountains between Portland and the Oregon coast.

Mexican - Puerco Verde at some popular place whose name escapes me in the heart of Reynosa, Mexico

Cajun/Creole - Upscale: Court of Two Sisters in NOLA, Super-casual: ACME Oyster House in NOLA

Seafood - Islamorada Fish Co, Florida Keys, or a place whose name escapes me in Gloucester, Mass. Or maybe the 15th Street Fisheries in Fort Lauderdale. That's a tough one.

Italian - Giacomo's in Boston's North End. Really close second: La Familia Giorgio, also in the North End.

Wings - You know, the first time I tried wings was 20+ years ago at Chili's. That night, I thought they were the most amazing things I'd ever eaten. Every time I've had them since (including Chili's) they were varying degrees of average. Therefore I am going to say: at the (now closed) NW Expressway OKC Chili's for a brief moment in 1987-ish.

Breakfast - The aforementioned Brennan's in NOLA.

Nachos - Man, who the heck knows? Nachos are not something I put much thought into.

BBQ - Prolly my dad's ribs, but the best BBQ sides I've ever had were at the original Rudy's in the Texas Hill Country north of San Antonio.

Chinese - Dim Sum at some random place in Portland's Chinatown.

Nacho's -- My ultimate Nachos
BBQ--Some hole in the wall in downtown KC
Chinese---Meh.

Best BBQ ever was at a joint in Colbert, Oklahoma called Po' Sams originally, and later Archie's after his son took it over. It has been closed for several years now. To get to it you had to leave HWY 75 and take the back road into Colbert.

Best Mexican food was at a place in Hot Springs, Arkansas which I do not know the name of.

Best steak is one off my own grill.

...rest of that stuff who knows?

edit...best fried chicken ever was at a hole in the wall place in Misawa Japan. Who'd a thunk that.

Steak - Ruth Chris in Vegas. I just can't comprehend how anyone could think Cattleman's is good, much less the best.

Hamburger - First time I ever had a grilled onion burger at Red Horse Grill in Norman. Later, I saw them do something I disagreed with and I haven't been back, no matter how great it was.

Mexican-- Taramaharas in Norman is my favorite. Tequillas in Pagosa Springs was tasty, too.

Cajun - Tiny place in the town at the end of Louisiana after deep sea fishing. Or, Bubba's and Boudreaux in Shreveport (now defunct)

Seafood - Rock Crab place in Miami. Famous. Some dude's name.

Italian - Victoria's Lasagna Rolls. i could eat a hundred.

Wings - Not a huge fan. Probably the boneless Shanghai wings at Chilis, which are of course chicken nuggets.

Breakfast - Original Pancake House, the one in Vegas.

Nacho's - Probably Texadelphia. No real choice here.

BBQ - My pulled pork. Other than that probably a Carolina Style pork sandwich at a tiny little place in Olive Branch, MS.

Oriental - Sushi/Oriental place in Caesar's Palace in Vegas. Scallop roll was awesome.

Pizza - Jo's in Purcell. I grew up (and out) eating it.

Hamburger - "Big Daddy" @ Ron's - Tulsa

Cajun - The Crazy Cajun - Port Aransas, TX
Seafood - The Spud - Alki Beach, Seattle (best fish & chips);
Real Seafood - a place in Seattle, up on Puget Sound, near Ballard. Burned down a few years ago.
Italian - dead heat between two places: one in Port Aransas, one in Port Isabel, TX
Wings - Meh. I like wings, but haven't had anything that was memorable.
Breakfast - Charlie Mitchell's - Tulsa (***sigh***)
Nacho's - Same as wings.
BBQ - Anything off my smoker. Restaurant: Lexington BBQ #1 - Lexington, NC (though Jack Stack is not far behind)
Oriental - Ri Le / Binh Le - Tulsa
Pizza - Umberto's - Tulsa

Port Aransas? Really? I went to Ingleside/Aransas Pass once or twice a year for 15 years and never knew about that. I would have LOVED to have known about a good Italian place there. I thought all Port A had was T-shirt shops, bars, not-so-great seafood and a beach loaded with tar balls.

Oil that has washed up on the beach. I don't know whether off-shore drilling is the culprit, or whether it is the several dozen refineries in the Corpus area and the oil tankers that deliver their crude. But of the ten or so times I walked the beach in Port Aransas, there were balls of tar that stuck to my feet nine or so. It's a nastyass beach.
