Do you strain it twice when making it like I do or just once, before you put the taco seasoning on it?

I strain it and rinse it with water to rid the meat of excess fat.

Taco Bueno has some of the best "dry" taco meat and I actually like it.

skirt steak, pounded with the back of a kitchen knife horizontal and vertical. squeeze a ****load of lemon juice on it. pound the steak again. both sides. let it rest a 15 minutes. grill or cook in a hot skillet with onions and bell peppers.

chop cilantro, roma tomatoes.

with warm soft white corn tortillas, YWIA.

**** Ortega and Old El Paso.

here is a pic of my skirt steak with salsa and pico de gallo (made with my garden tomatoes). I have the butcher tenderize the skirt steak. it is the perfect taco meat for grilling. you can cook it at high heat, but it will not dry out because of its fat content. Most flavorful meat.

WE were talking about ground beef. The resident gourmets decided that we were talking about carne asada. ;)

If you're going 'the stuff my momma made when we was kids because it was cheap and fast and we loved it' it's the good 'ol Old El Paso stuff from the yellow envelope. Drain it once as to leave a little of that deelishus orange grease that dripped down your arm when you ate it, add some lettuce, tomato, grated cheese and crappy taco sauce and you've got some old school, greasy, hardass taco shell, I love my momma goodness.

Ok. in that case, I get the ground beef with high fat content. I brown it thoroughly and drain the fat. There's a residual amount of fat, which gives good flavor.
